I like him, and he's popular on this board too in the right threads. Maybe you guys are getting Australian shitposters or something.

He's not exactly real, he doesn't know much about science irl, but his show Good Eats holds up. You learn a lot from it when starting out as a beginner. Plus the fuck-ton of episodes means there is a lot of advice on a lot of dishes and cooking methods. There's a torrent of it all on Piratebay, I think.

He was a meh but decent enough host on Iron Chef America though I'm pretty sure most of his live commentary was added in post. He seems to be having fun in Cutthroat Kitchen which is nice I guess but the show is absolute garbage and entirely scripted. Its problem is that it tries to make cooking as little about the cooking as possible. Rather than seeing all these good techniques and ingredients, everything is washed over with "PUNK ALT CHICK VS. BIG RETIRED VETERAN ARMY COOK VS. ASIAN NERD GUY VS. SWEET VIRGIN WHITE BAKER GIRL FROM MONTANA" and "LMAO sharing utensils with your OPPONENT oh wow" and "Ewwww you can't make that out of gas station sandwiches!!" etc. etc.

Like most of this board. He's not a chef. He does have a formal education from a culinary school, but has never worked as a pro chef.

Let's look at his shows:
Good Eats - This was meant for entry level cooks and focused on explaining the hows and whys of cooking techniques. There are shows on setting up a kitchen, knife selection and care, steak preparation, making gravy, baking, making pasta, canning, pickling. Basically this show provides all of the knowledge requested in the "Why isn't there a /ck/sticky?" threads. It's presented in a more or less entertaining manner. Or at least as entertaining as the constant shitposting responses to such questions on here.

Iron Chef America - Not much to say here. his commentary was informative, and he was friendly. We also got to watch him go from fat fu/ck/ to skinny fu/ck/.

Feasting on Asphault - How to get your vacation paid for by the network 101. It was a travel show aimed at middle aged men who still thing riding motorcycles means something. Not a terrible watch.

Cutthroat Kitchen - You want me to do Chopped for a second time in one week? Ok, but I get to troll the contestants. Entertaining, but obviously more about the sabotage than the food. I feel sorry for the judges most episodes.

Overall, he's a pretty cool dude. I've heard nothing of him being a dick to fans. He's like the Mike Rowe of cooking.

Another common mistake is leaving the door on the oven closed when using the broiler. The broiler needs to operate with the oven door open. Most ovens have a "stop" on the hinge for this. It lets the door stay nearly closed but still maintaining a gap. That's important because if you shut the door all the way then the broiler can overheat, which in turn makes the oven shut it down for safety.

The quality of food from any chef who is a public figure is never a factor at all on this board. It's more about who can "meme" harder by style, appearance, personality, and how many "memes" they can fit into a dish. Say it was 2 years ago, if a chef combined sriacha, bacon, maple syrup, and kale they could gain some sort of notoriety on this board. His dish, and himself would reach "meme" status. It would get reposted, discussed at very heated lengths, be used as a punchline, and be used as troll bait. At no point would there be anyone that had made claim to cooking or eating it, and never would their be actual opinions on the food itself, just the person credited with creating it. Guy Fieri is a good example of this; he is whored out for lulz here frequently, and while there are a few people who have said they ate at his restaurants it was mostly a lukewarm reaction. Overpriced, mediocre, and gimmicky is all they would say. Yet, at least once every couple of days a thread all about him pops up full of nothing but comments on his hair and clothing, remarks about his food looking gross, exaggerated "memes" based around his over the top made for tv personality, and several utterances of the term "flavortown."

Don't get me wrong, it's funny, but the point is no matter how good or bad a chef is, it ultimately won't affect his popularity here at all.

I think Alton not being talked about on this board often is strictly because there aren't really any jokes to make about him. He's not flamboyant and he's not normally put in situations where he can be an ass hole.

Strangely I googled it and couldn't find them online. I don't know if he made them on his show or not. But I have the exact book the other anon was talking about and I found it for you.

"Dark and Lovely" pickled eggs;
2 1/4 cups cider vinegar
3/4 cup water
1 1/2 Tbsp dark brown sugar
1 Tbsp granulated sugar
1 1/2 tsp pickling spice
1/4 tsp liquid smoke
1 Tbsp kosher salt
3/4 tsp chile flakes
1 dozen hard cooked eggs, peeled

Bring everything but the eggs to a simmer until the sugar and salt are dissolved. While still hot pour over the eggs in a 1 quart jar, cool to room temp. Refrigerate for 4 weeks before serving

"Classic" pickled eggs:
2 1/4 cups apple cider
3/4 cup champagne vinegar
1 Tbsp kosher salt
2 tsp pickling spice
6 whole cloves of garlic
1 dozen hard cooked eggs, peel

same instructions as above

They keep for about 2 months once pickled.

Nothing, in my opinion. But that's because I already know how to cook.

The tricky thing for beginners is that many recipes are specific (e.g. use 1/4 tsp of X or "saute for 6 minutes", etc.), whereas in the real world things vary a lot. Ingredients vary in potency so blindly following the "1/4 tsp" the recipe calls for might be too much or too little depending on the exact ingredient being used. Likewise the saute might take more or less than 6 minutes depending on the pan being used and the heat output of the stove (all of which vary). What's nice about Alton is that he explains the how-and-why of everything so if you aren't an experienced cook then you understand what the recipe is trying to achieve and you can adjust things as needed.

That being said, if you already know how to cook watching his show is like being forced to attend 3rd grade all over again.

I saw this episode recently. He didn't use bechamel in his lasagna AT ALL. Cheese was only added as a topping, and even that was optional.

His reasoning was that he already had enough moisture (from the juice of the canned tomatoes and the zucchini and eggplant strips) and enough fat (from the sausage and ground pork), so all that was really missing was milk and milk proteins that the bechamel provided. His solution was to add milk powder so he could provide the milky flavor without the excess liquid.

The only cooking show I ever watched, as it was more about the “science” behind cooking then shilling recipes and I found that far more interesting (and he's a funny guy).
