protip: when buying cheap bacon, use the boiling method to render out the fat and a lot of the nitrates and fake smoke flavor.

fill pan with hot water, bring to boil, add bacon as its coming up to temp. let boil/simmer for 10-20 minutes. pour out water into large bowl, finish frying. thank me later.

do not do this with the good stuff.

I don't hate bacon but smoked cheek is way more flavorful and for some reason it's extremely cheap while bacon is expensive as shit, like 6 strips of thick cut bacon (basically 120 grams or so) cost like 1.50 eurobucks while 400 grams of smoked pork cheek costs like 70 cents.
