I live in NorCal, surrounded by japs and asians of all kinds. It's fairly common to see escolar called butterfish here (or just escolar). As a matter of fact, I've never seen it called white tuna, but I've heard of it being called that. And you're right, any decent place will stop you if you try to order too much escolar, but there's a lot of unscrupulous places that don't give a shit. Many people can't tell the difference between a good sushi bar and a bad one.

"Sushi grade" isn't really a thing. There's no regulation for that. At least here in the states.

If you learn how to shop for fish properly, you can eat the salmon you bought from the grocery store raw. Just please keep in mind however fresh they claim to have received it, it's probably safe to add a few days to that.

Another thing to keep in mind, wild salmon may have parasites. Those parasites are killed by deep freezing them. If you're going to do sushi I'd get it already frozen, or freeze it after purchasing. No use taking unnecessary risks. The stores are required to inform you if it is has been previously frozen or not, and where it comes from, in case you're worried about quality degradation, or whatever else.

Inari and Shitake if you want to stay traditional but want something with taste. Nothing like veggies in soy sauce and sweet vineger to make veggie sushi a good choice and order it all the time as a side. Tamago also counts.
