Because food scientists figured out that delivering large quantities of sugar, salt, and fat can make food addictive, and most people devote enough energy to just getting by that even if they become aware of how awful the junk is for them, they don't have the fucks left to give to devote to breaking out of the unfortunate set of habits, cultural factors, and economic fuckups that put them in this position in the first place.

Not to ignore the more enlightened areas, but you do some weird shit when it comes to food. I see it in the UK too but this country is pretty much Little America. Most cultures enjoy excellent food routinely as a normal diet.

as an american, i know exactly why. businesses thrive off the stupidity of the populace, they specifically create businesses in areas with people that are statistically too stupid to know its bad for them and they try their hardest to keep them uninformed. this is why the south, the area of the highest concentration of poor people, is full of nothing but fast food and liquor stores and has the highest percentage of obesity and drunks in the nation. they are intentionally kept stupid, at one point the food pyramid was said to be wrong, and that meat and dairy aren't actually healthy to be consumed so were going to be taken off, only to be bullied by businesses who make money off those being part of a healthy diet. there are also not enough services to educate the population on diet. i have said it before, i didn't even know i was eating upwards to twice the recommend daily calories for my weight (190 pounds 6'2") and still hardly have an idea of what all nutrients i actually want to get and don't want to get. nowhere was i told that too much of a good thing was a bad thing nor was i drilled on the difference between sugars or really anything beyond a 3 month course in 8th grade until i found /fit/. most people in my area don't even own a computer and most parents wouldn't buy a computer for their kid here (bible belt here) so they would never have had the same opportunities to learn as i did. and then there are those who do have the same opportunities but just don't use the internet as a learning resource and deserve it (more likely) but in the end it can all be summarized in a single word which i will append in a tl;dr
