Then you have a million dirty spoons cluttering up your station. finger is much easier. You wipe your saliva off on your apron afterwards anyways. Fingers get all over food in a restaurant anyways. poking, prodding, adjusting, plating. it doesn't matter.

of course when you are prepping raw meat you wash your hands afterwards. if you mean like grabbing a steak out of the drawer and putting it on the grill, you use tongs. if you have to use your hands to peel the parchment off a hamburger and throw it on its not a big deal. its just beef. you are more careful with poultry of course. even during a very busy service a line cook still has time to wash their hands if they get contaminated.

and when cooking I always used spoons, I had a pan with clean spoons and then a pan with dirty spoons. I guess you could also keep a couple spoons in disinfectant but I think its gross getting that directly on food. im just saying If I saw a cook use his fingers I wouldn't really care or be that grossed out by it. any germs are probably killed by the heat of the cooking
