Chicken Adobo

Put the following into a container
>500g of chicken, any parts (I like drumsticks, wings, thighs) with skin
>60ml dark soy sauce
>45ml white vinegar
>15ml sugar
>4 bay leaves
>4 garlic cloves, minced
>Black pepper

Refrigerate overnight

The next day
>Put 60ml water into a pot and bring to a simmer
>Empty the container into the pot
>Cover & simmer for 15 minutes
>Flip all the chicken pieces and spoon the sauce over them
>Cover and cook for 15 more minutes
>Serve over rice

So fucking good. Also, it keeps for like 7 days with no discernible decline in quality, so you can multiply this recipe and make a big batch for a week's dinners.

Simple "lazy" pizza.

Take sliced bread, or whatever half decent bread you have around (I usually use baguette ), then cover it in pizza sauce, or even pasta sauce. If you don't have either, a decent salsa works good enough. Then throw whatever cheese you have on there, ideally cheddar or mozzarella. The latter is good enough as is but I usually like to add green peppers, olives, tomatoes, onion, mushroom, salami, turkey, or whatever else I have left over.

Pop it in the oven at 450F for 8-10 minutes. It's a tasty way to use leftover and ensure nothing goes to waste.
