Blatant lie.
Asian food is heavy with mushrooms and fungus.

You must be either South American or middle eastern to think that. Get out, human jerky people.

>morels
Short season, often a pain in the ass to find and definitely a pain in the ass to clean, but very worth it. Unique flavor.
>king oyster
Farmed mushrooms so available year round and cheaply. Very firm, meaty texture and solid flat or, especially when roasted. What portobello mushrooms wish they were.
>chanterelles
Great texture, mellow, beautiful buttery flavor.
>hen of the woods/maitake
Feathery shape. Good flavor.
>pine/matsutake
My favorite. Meaty texture and bold, complex cinnamon-pine flavor.
>hedgehog
Similar to chanterelles but a little softer in texture and a little sweeter.
>turtle
Neat grapey/red wine flavor.
>black trumpet
Expensive as hell generally but really great flavor IMO.
>porcini
>admirable bolete/velvet cap
Slightly sweet/spicy
>fairy ring
Nutty flavor.
>chicken of the woods
Shelf mushroom. Meaty texture and slightly chicken flavor.

Anyway I'm spicfag and my mom loved mushrooms but I thought I hated them as a kid. Except my fav treat she'd make was fried mushrooms, she just never called them mushrooms and called them honguitos and my kid brain didn't connect that that was just spanish for mushrooms.

I also used to think comino and cumin were different. Like for a legit first year in college I thought cumin was a different indian version of comino like how there's oregano and mexican oregano.

Forage some, and have grown king oysters and maitakes, but mostly my knowledge is from working in restaurants and talking to local foragers/suppliers. Love cooking with mushrooms, there's so much variety and such great flavors to be had. Helps that I live in the pacific northwest, we've got a ton of great mushrooms here.
