Chicken Tender General

In this thread, I'll be doing a chicken tender tutorial for all skill levels while I make myself dinner.

Picture is West Creek pre-made chicken tenders, available at most restaurants under "kids chicken fingers". They are the dankest dank.

first things first we gotta get some taters in the oven. what's a chicken dinner without potatoes?

i'm gonna slice these spuds and boil them before roasting them in the oven. boiling them first shaves a good chunk of time off the cooking.

ive sliced the potatoes into pieces appx 1/4" x 1" x 1"
ive put them in a pan covered them with water, put the lid on and am leaving them on low to medium heat to boil until they're soft but not quite falling apart. add 1 tbsp of salt to the water to cook

for one chicken breast, you'll want to mix about 1/2 cup of all purpose flour and 1/2 cup of corn flour in a bowl. add 2 tsp of salt. for your egg dip, you can use either buttermilk or egg. i am using egg whites because they're left over from my last baking project.

Sure.

I use Sriracha to marinade the chicken for an hour. So slice it into strips, soak in sauce. I don't use egg wash or double dip my chicken, I use AP flour, salt, pepper, garlic powder, onion powder, paprika and cumin. Remove chicken from container and toss in spiced flour until totally coated. Shake off excess flour so your don't scorch the pan and have flecks of black burnt shit all over your chicken. Fry in oil of choice, I always use vegetable oil. Remove and place on paper towels to drain...unless you have a cookie rack, then use that. Make sure to put a sheet pan underneath.

Good Yukon gold potatoes and hot oil. Basic seasoning really. Paprika, onion powder, cayenne, salt and pepper.
