They are chocolate cakes with red dye in them. The only difference is that you use slightly less chocolate or cocoa in them, so you have a gentler chocolate.
Tbh red velvet cakes are not even like velvet, chocolate cakes that are made with just eggs and baked in a waterbath are the true velvet cakes.
