For Sonoran food, it's usually unraised flour, which is typically wrapped in a burrito (or 'taco del harina', wheat taco).

New Mexican will use flour tortillas, but as a side like bread.

Central Mexico will use corn tortillas, always. Oaxaca servers corn tortillas, but not usually in a taco.

Yucatan and other Mayan areas will usually do pozole or tamales as oppoosed to tacos.
