I don't know how chewy bacon can be good. Maybe it's because I've never had it prepared that way on purpose and it was always by someone that had only half-cooked the bacon before taking it out. It was like gnawing on a giant piece of gristle.

I actually prefer chewy because the fat isn't a hard crisp, but at the end of the day, it's all personal preference.

Pancetta? It's pretty okay. Never had one that beat out some well smoked pork belly, and I've had plenty. Only exception is some strangely fatty deer that a friend smoked and gave to me. Apparently it came from one of those deer petting zoos you'll come across. Died at the age of two from getting itself caught on some wire so they drugged (ketamine) then shot it in the skull. Fattest deer I've ever seen.

Looked like Pancetta but obviously wasn't.
