Watch some videos on julienning etc, and just practice. No reason to pay. You'll be in a class, so the experience won't be much more personal than youtube.

Depends on your skill level. If you're really green start out by getting used to how a knife handles and look up some videos on how to sharpen them.
Get used to holding food safely, for example when dicing onion keep your fingers and thumb in a claw shape so the knife blade is against your first knuckles.
Keep your knife sharp, it'll make life easier and your hands intact.
YouTube and Google will help but its a matter of practice practice and practice.
Also you will cut yourself a couple of times, happens to everyone.
