I like making sushi, but when I want to cut the sushi I always end up smushing it because the nori is so difficult to cut through, you have to pretty much saw it.

Any advice? Do I need a thousand-dollar knife or something?

Don't roll when the rice is hot. The nori will turn rubbery making it difficult to cut.

This was the first Sushi i ever made, from scratch. I used some shitty red vinegar i got on sale in an asian store and paella rice that i soaked for about an hour. Inside is just cucumber and carrot, which i steamed. I took that fucking nori my roommate had left on the shelf for about 2 years, soaked it in water, applied all the stuff on it on some bamboo mat and rolled it up. Thats it. If you suck that much, and you said you like making it, so you have done it several times, stop doing it and try something else. Most things about cooking is just knowledge, you have to know how to use different things and how to apply them properly.

Like a tomato, you need to break the skin first. If you cut into a hole or notch you've made it's easier to slice cleanly through.
Also let the rolls sit and get moist first, it's a LOT easier to slice through damp, soft nori.

...and, yeah, sharp knife. Wipe it between slices so it doesn't get gummed and sticky with starch.
