A shit-tier croissant (like you'd get at McD's, American grocery stores, or even some American bakeries) is simply bread shaped in a crescent. Do you own a copy of the joy of cooking? They have a great section on corn bread which is super easy and allows for lots of customization. I buy Bon's Red mill cornmeal, and usually add sharp cheddar and a can of mexican green chillies at the stage where you add wet ingredients. It's always amazing, although it is something I generally only make when I make chilli, so it's a colder weather type of thing. I love it though.

Here's there basic one:
Makes one 8 inch square or 15 2 inch muffins

have all ingredients at room temp. Preheat oven to 425. Grease pan with butter or bacon drippings. Place in pan until sizzling hot.
Whisk together in a large bowl:

1 1/4 cups cornmeal (pref stone ground)
3/4 cups all purpose flour
2 1/2 teaspoons baking powder
1 to 4 tablespoons sugar (I do 1 or 1 1/2--i like savory)
3/4 teaspoon salt

then add:
1 or 2 large beaten eggs (more eggs the richer it is--if im doing wet ingredients/cheese usually add 1)
2-3 tablespoons melted butter/veg oil or bacon drippins
1 cup milk

combine with few rapid stroked (the less you beat/work it the better!!!!)

bake 12-18 minutes, until browned and a toothpick comes back clean. eat immediately.

At the wet ingredient stage you can customize a lot. Add:
sharp chedder, canned chillies, sun dried tomatoes, cooked ham or bacon, roast poblano peppers, jalepeno (fresh or roasted), canned chipotle peppers in adobo sauce. The word is your oyster.
