I've never heard of this, but I do similar things with other breads though, as said above, I save its innards for other uses. Such as stuffing.

I don't see their point doing that either, I'd just cut it thinner. For instance on a standard NYC bagel that could be cut into four slices instead of the usual two. I like it thinner myself, but that's just me, and I know here on 4c I'll take shit for it.

Most bagels these days aren't that good--they are way too doughy, large, and like normal bread. If you get a good, chewy bagel you'll know the difference. It makes sense because a bagel is more about crust and flavor than the massive dough piles they are in most places.
