No, but you're correct about the becoming accustomed to it part. I hated meatloaf as a kid. I'd eat each small bite with a big forkful of mashed potatoes. Sometimes I'd just eat the peas or greenbeans and mash and let my siblings go at it.

It's really not that awful except for the fact that grocery-store ketchup is pretty much just red sugar, and using it in or on meatloaf creates SUGAR BEEF which is disgusting.

>I don't understand all the hate towards meatloaf on /ck/.
Meatloaf has many things going against it: It's a lazy dish. Like a casserole it's just mixing stuff together and popping it into the oven. It's also boring - a big hunk of the same not particularly interesting flavor. The same mix can be made into Italian style meatballs, which is a much better use for the meat.

Then there's the real kicker: it's trashy. It's barely a step up from Sloppy Joe, and a pretty clear step down from a burger. Even hot dogs are better.

The biggest reason I hate it though is because of its limits. The best meatloaf is only going to be mediocre, and chances are it'll be a little worse than that. I can't imagine the scenario where making a meatloaf seems like a good idea. Maybe if you have to feed really fussy kids? Even then, it's not hard to do better than meatloaf.

Have you ever had European ketchup? You might like it more than American ketchup. To be honest, I like both, but there's a definite noticeable difference between the two: European ketchups I've had taste like condensed tomato juice and have a strongly (and I fucking hate to use the word because memeword but there's really no other way to explain it that I can come up with) umami flavour to it whilst the American ones have a sweet-and-sour/sweet-tart/tangy flavour.
As said, I like them both, but I think each is better on certain things.
For example, I've only had meatloaf with American ketchup because in my country, meatloaf is eaten either unsauced or with a mushroom-and-onion-stock-based gravy but I'd bet it'd be waaaaaaaaaaaaaaaaaaay better with European-style ketchup on it, instead.

In fact, when next I make meatloaf, I'm gonna eat it with Eurotchup to see if my inkling is spot on or not.

Here's an idea, Anon: how about you take the same seasonings for what you think Italian meatballs have in them and form it into a meatloaf instead of balls?

I mean... I am from Italy and we don't have separate word-stems (Italian and English work differently) for "meatball" and "meatloaf."
"Meatball" is "polpetta" which literally means "little pulpy/fleshy/meaty-thing" while "meatloaf" is "polpettone" which literally means "big little pulpy/fleshy/meaty-thing."
The two are seasoned identically, the only difference is the size and that meatloaf's greater mass allows it to have larger ingredients put into it, like whole, hard-boiled eggs and other stuff.

Psychological projection is a theory in psychology in which humans defend themselves against unpleasant impulses by denying their existence in themselves, while attributing them to others.

In this case, anon was implying people only like meat loaf because their mothers cooked shitty meat loaf to them.

What "projecting" means is that infact the anon's mother was a shitty cook, because meat loaf is a lazy, shitty dish, yet he tried to call other people out for it.

>> No.6725417

I don't like the crust all that much, to be honest. Least favourite part for me. That's why I prefer sauced meatballs such as in the Swedish or central European traditions rather.

Perhaps you dislike meatloaf because the mince your mum used was too lean, yielding a dry final dish?
After >>6725177 mentioned Betty Crocker, I looked up her recipes and they all look horrible. They all suggest lean meat and adding milk which is a bad idea because the moisture will evaporate out as the meatloaf cooks. More on that later.

Meatloaf wasn't a common part of my mother's culinary repertoir when I was growing up, but when it was made, it was as described in >>6725039
>unsauced or with a mushroom-and-onion-stock-based gravy

I've never asked her how to make it, but in adulthood, I've taken to making mine with 80/20 mince. If I use 500g of mince total, I add 100g of breadcrumbs because, paradoxically, it mimics moisture. See, when cooking, no matter what you do, you're going to lose moisture to evaporation so you have to mimic moisture by retaining and/or adding oils. Adding an equal weight of crumbs to that of fat in the mince aids in retaining this "moisture" by reabsorbing the fat into the meatloaf as it renders.
What fat happens to escape the meatloaf (and some will without fail), I use for making the roux for the aforementioned gravy.

Perhaps if you gave meatloaf another go but without this silly fatphobic stance that seems so prevalent in the US, you might like the results.

Of course, you needn't do as I suggest if your dead set against eating meatloaf, but what have you to lose other than $5-6 worth of ingredients, really?

>> No.6725426

Those aren't fillers. They're aromatics.

A filler would be something used to "stretch a buck/quid/Eurodollar/jewgolds" IE a cheap ingredient used to stand in for a portion of the more expensive ingredient in a given recipe, such as breadcrumbs in meatloaf, TVP in Taco Bell's ground beef tacos or beans in chile con carne.

a meatball has so much more surface exposed to heat, it forms a great crust. it is also made in a pan, which only adds to that factor.

a meatloaf has a lot of mince cooked in its own juices, it is also made in an oven which means it will barely have any crust. the texture inside a meat loaf is also different from the inside of a meatball.

Don't do that!
Cook it on a baking sheet. Basically, form the loaf by hand on the baking sheet and... bake. It'll form a decent crust all round except the bottom side, which is fine, and any fat that renders out can be used as suggested in >>6725417 to make a roux for gravy.

>>6725656
Try something super simple at first:
Caramelised onions, 60g
Beef mince, 80/20, 500g
Breadcrumb, 100g
Egg, 2 large
Salt or stock powder, to taste
>some might say stock powder is cheating; while they might be right, it's also delicious

Combine.
Form.
Bake in already hot oven set at 180°C/350°F for like 35 minutes then off the heat and let it sit in the oven an additional 10 minutes to ensure it's cooked through.
Remove.
Cool a bit.
Slice.
Eat.
Om nom nom nom nom.

The fat that renders out can be used to make gravy.

I saw Me, Myself and Irene in Italian. All the black characters had Neapolitan accents. I saw it in German and they all spoke like people from Hamburg. In the German-speaking world, Hamburg is generally regarded as a crime-riddled cesspool. In the Italian-speaking, the same is true of Naples.

Anyway, I'm sure a lot of the original script was localised rather than translated directly, to make it more accessible/relevant to the speakers of those respective languages. Me, Myself and Irene, for example, referenced cartoons popular in Italy and Germany in the 80s a few times, stuff that I know the US never saw, so I'm sure the original language referenced Thundercats or something else us in Europe never really got familiar with.

Too late, I already made meatloaf with artificial intelligence. Don't worry though, I only used a little bit.

>not using cheezit crumbs and beefy onion soup mix

>not topping it with gravy made out of the other packet of soup mix from the box

ketchup on meatloaf is vile though, I'm apt to agree

Instead of ketchup on top, I like to mix worcestershire and brown sugar, then add a bit of whatever hot sauce you like. Perfect glaze if you like it slightly sweet. For savory, do cheese.

I think you dropped this.

Meatloaf is delicious, if you don't like it you've never had a properly made one. There is literally no such thing as bad tasting beef unless it's rotten or some retard actually managed to make beef not taste good
