Guys, I've never had sweet potatoes in my life because they just don't sell them in my country. Now I see them in supermarkets but have no idea what to do with them. What's the best way to cook sweet potatoes in your opinion?

>> No.6703171

Sweet potato pie is the pie of Gods. I also like blending them into a puree with cauliflower, olive oil, and some salt (pic realted, in the upper right corner).
I know a lot of people hate them, but I actually really enjoy sweet potato fries, personally a lot more than regular french fries, but that's a gamble since sweet potato fries seem to be a love/hate thing.

>> No.6703199

hmm I'll try roasting them, seems pretty fool-proof. Thanks!

>> No.6704431

treat them like pumpkin, they are moderately sweet and very mushy when cooked

I've never had them either but the name 'sweet potato' just confuses me tbh. I realize its probably a misnomer, but I just can't put the two together in any way

You can go full /fit/-ard and just microwave it with the potato quick setting. Just add a litlle more since sweet taters need more heat than regular potatoes. Just wash it before and cover it.

Then remove the skin and seson lightly: a little butter and salt.

Try using them in sweets rather than savoury dishes. For example, I made yam jam from purple sweet potato today because I got them super cheap (33¢/lb).
Here's the basic recipe:
Peel and cut up about 3lbs of yam and/or sweet potato of any colour. Try to keep it to one colour or it'll come out looking brown and unpleasant.
Put it in a pan.
Add water to barely cover and bring to the boil.
Mash as soon as they're soft enough to mash.
When mashed, cook, stirring constantly, until water has mostly reduced out then off the heat and add 400g of whole fat sweetened condensed milk (that's a single standard-sized can).
Mix together and set back to high heat.
When boiling again, lower the heat to medium-low/low and cook, stirring from time to time, until reduced and quite thick.
Add sugar to taste. I like grated palm sugar best, but American-style brown sugar (either light or dark), fresh-grated Mexican-style brown sugar (piloncillo/turbinado), white sugar or evaporated cane juice are all fine. Also just a bit of salt.
If desired, temper some beaten yolks with the jam-to-be and stir it back in for a richer mouthfeel.
Push through mesh or chinois/china-cap to separate fibrous parts from smooth parts.
Cool the fibrous bits and smooth bits in the fridge in separate containers.
Use the fibrous stuff in cakes.
Use the smooth as a spread for toast (add a bit of butter to the toast first, then the jam and om nom nom), a frosting for cake or mix 1:1:1 with milk and cream as a base for ice cream. You can also stir it into plain rice pudding or oatmeal or as a filling to steam buns and stuff. So. Fucking. Good.
You can also mix it with a little cornstarch and beaten eggs (once cool) and bake it in a pie shell. Americans like to add lots of powdered warming spices (cinnamon, clove and nutmeg being the most common three and, in fact, often the only ones used) but I like just a li'l 'nilla extract in mine. You can try both or, perhaps, a mix to your preferences.

Sweet potato pancakes.

Peel and cut into smaller pieces.

Steam.

Mash.

Add flour to bind.

Roll into doughy ball.

Pinch off appropriate size pieces and flatten/roll into pancake shapes.

Fry each side in hot pan.

My two favorite simple ways to prepare. Cut into chunks with an onion and roast a chicken on top of them.
or for dessert simple roast them until done and serve with butter and a good drizzle of condensed milk.

I don't know what was said in here or anything. I don't have time to read all that crap. But my favorite way is to slice them into about 3/8 inch thick slices, put just a little olive oil and pepper on each one, both sides, put on a grill and flip once and they should be soft and good. Make sure they're browned sort of but not burned and not raw. Don't go with all the sugar stuff/marshmallow/pies (although good it can be too much) Also, just shave the thing on a shredder like a normal potato for hash browns, cooked until more dry, then grind to a powder almost and sprinkle on buttered popcorn. It's amazing.

>> No.6706555

You could cut them up and steam them for like 5-7 minute if you just want it to be fast. Add butter, cinnamon, whatever, mash it up. Delicious.

Roasting is easy, just throw them in there for an hour, takes longer though. Honestly most of the time I just cook them and eat them plain, fucking delicious.
