Both of these. Both beer and buttermilk will give you a great batter, the main difference being that beer will make the batter a bit puffier, from the carbonation. Club soda will do the same thing. Buttermilk gives good flavor. It just depends on what you want. Just remember to season the batter well.

Oil isn't really going to react with seasoned cast iron, just look for something with a high smoke point. Typically nut or seed oils

If you mean like in your OP pic, they are made in a factory, put into a big bag in a freezer, and are transferred to a restaurant where they're thrown directly into a fryolator until golden-brown.
