I just did some up the other day to go with lamb chops.

Cut off the nubs, remove suspicious-looking outer leaves, halve them. Toss in bowl with olive oil, salt, pepper, a little bacon grease if you got it (deeper rich flavor than just the olive oil). Roast single layer on foil-lined baking sheet in 350º oven 20-40 mins until outer/loose leaves look crispy. Drizzle with balsamic vinegar reduction right before serving. Taste and sprinkle more salt if necessary.

Halve, saute in olive oil with onion and a clove or 2 of garlic. cook to desired texture (i like mine extra well done). If I have them, I throw in a handful or two of pecans and cook for a few more minutes.

Also, I like to use brussel sprouts in fried rice. A put a shit ton of them in there, quartered. so good.

Half the Brussels Sprouts, sautee them in a little butter to soften them up a little, then coat in this mixture:

>olive oil
>fish sauce
>sweet thai chili sauce
>soy sauce
>honey
>garlic
>ginger
>black pepper

Then cook them in the oven on 450 until the outer leaves get crispy. Sorry, picture isn't great. This method is for people that don't really like Brussels sprouts as the heavy flavor from the sauce almost completely masks their taste.

split them, toss them in olive oil, salt, pepper, and some crushed red pepper flakes

then roast em in the oven for 20-30min until they are a lil bit crispy

its spicy and kind of reminds me of a dry horseradish

brussell sprouts taste great as long as you don't overcook them

Thanks for the suggestions, I was weary of over cooking them so I maybe didn't cook them as much as I could have. They were pretty decent though, better than expected. I still have more il probably cook tonight after work.

Thinly slice them, fry them in butter with some shallots and garlic, then add cream and allow it to reduce.
