Disregarding the screwed up syntax of all that (I'd have to think to figure out what he or she is actually allergic to and how), I actually do have that many allergies personally, and they ought to just do themselves a favor and not eat out. They will never win, and it'll never work out.

Many of those don't look like actual allergies and more like they've just cut out whole families to avoid the possibility of cross-reactivity. If they truly suffer anaphylaxis they would specify, not write "other melons", unless you're a fool. This card is so poorly constructed as to be stripped of a good deal of utility.

Look into documentaries on the master chef certification test and things of that nature. You won't find a lot of it on the internet because it takes a lot of work and most people would balk at the suggestion of ordering it, and then at the price tag even if they were impressed by it.
I love it, though, and, especially in terrines it is wonderful. People still seem to be OK with sweet gelatin, so you might still see some good stuff out of patisserie every now and then.
