I work as a butcher in a supermarket and i'm able to get quality beef at ridiculously low prices by labelling it as stewing beef (about 1/5th of the price per kg of what it would be).

I'm talking sirloin, rib eye, fillet, whatever. Only problem is to avoid the whole getting fired thing I have to dice it up so it looks like stewing beef. I mean I could label sirloin up as best braising as something but it's getting into riskier territory, the senior managers aren't completely dumb.

So my question is, what's the best way to cook thin strips of beef? Today I sliced some fillet into stir fry style slices. I'm thinking just flash fry them in a hot pan for a minute or so, maybe with some butter?

Na, no way of getting caught with a bit of caution. I'm at the back of the shop with a good view of anyone approaching before they see me. If i'm casually slicing up some meat nobody is going to know what's going on. And even if worst cast scenario they did sneak up on me and see, I just say i'm using it for lean stewing steak for the counter. Then they cant do much but tell me why thats dumb.

Self checkout really is a godsend for the grocery employee thief.

I used to cut meat for Kroger.I was a closer, and I made out like a bandit every week. Cut tenderloin and labeled it as mock tender, I could fudge the /lb price for anything in the computer. The labeling system wasnt connected to a network, so there was nothing that could directly catch me.

Meat is hard to track m8. Mispick shipments, customer thieving, bad meat that was tossed without logging it. There's a lot of things that could explain why meat could go missing. Low level management likely has too much other bullshit going on than to track marginal discrepancies in meat sales and logistics.
