Made these yesterday. Chicken breasts, first cut into small strips and coated with flour and spices, then dipped in mixture of eggs, water and leftover flour with spices, then covered in panko breadcrumbs and deepfried. With honey mustard dip.

1) cut into small pieces
2) combine flour with white pepper, paprika, chili powder, garlic powder
3) coat chicken in spiced flour
4) take leftover flour (add some more if needed), mix with 4 eggs and a bit water until it looks like pancake dough
5) dip chicken in the mixture then in pank crumbs
6) deep fry for 2 minutes then put them in a bowl with a lid on so the residual heat cooks them in the center

Just made fried chicken last night. Shit was so cash. I've also got some chicken breasts I'm gonna make into chicken parm.

As for preference, juicy interior is an absolute must. Crisp exterior, but not super crunchy. Pan-fried is a bonus. Popeyes is awesome (especially their spicy chicken), and I've started to move away from KFC (I only go there anymore for the buffet.)

You know what irks me about fried chicken? People still fry whole bone in pieces. I debone thighs and drums, cut them 3/4 inch thin, brine them for 4 hours and buttermilk fry at 360 for perfect cooked to order golden brown in 4 minutes. On Black Friday at one local supermarket, you can get a whole turkey breast (not the whole turkey, just the breast) dinner for eight with a fucktonne of side dishes for $25 and same with a ham dinner on Easter Monday. :-) You can get a roast lamb dinner on Easter Monday, as well, for $40.
