Indian food. I'm an omnivore, and I fucking love vegetarian indian dishes. Baigan Bhartha is actually fairly simple and is absolutely delicious (it's an eggplant dish cooked with spices, tomatoes, peppers, and coconut milk). Also, Saag Paneer. You'd earn extra points for making the paneer yourself (it's stupid easy). And make some homemade naan. You can't cook it in a clay oven authentically, but you can cook it on a cast iron or heavy griddle that will do it up nicely. Brush it with some clarified butter and sprinkle with some coriander and sauteed garlic, and you're good to go. And don't forget a pot of Masala chai. It's all easy as fuck, unless you can't get the right spices, but she will be impressed.
If you don't want to go the Indian route, do some Nutburgers or Stuffed Portobellos on couscous.

These guys have it right. Vegetarian Indian is one of the few cuisines that actually doesn't fuck up vegetable dishes, since half the damn country is vegetarian. And, it's cheap and easy.
There's a few Thai or Indo dishes, like vegetarian red curry (Thai) or Laksa with tofu (oh, wait, Laksa has shrimp paste in it, nevermind).
