pico de gallo. Not that I don't like other salsas but the freshness is a huge difference that you don't get from other salsas. Also the diced ingredients make a difference when compared to other fresh but blended salsas. I'll try different salsas on occasion but pico de gallo I use on an almost daily basis

Salsa simply means sauce and I find it rather weird that Americans corporations could import that word and arbitrarily use it to describe a specific sauce/range of sauces (?).

my own. chunky tomato, onion, jalapeno, assorted spices. Especially cilantro.

This one is one that I absolutely love.
It's a little work-intensive, but I make it in bulk and can it, so it's enough for several months to a year:

Salsa de Toreado:

40 Jalapenos
4 onions, sliced into half-circles

Oil a pan as if for a pan fry
Fry up the jalapenos until blistered and blackened on one side, flip and repeat on the other side
Add onions to remaining oil and fry until golden

Add to this:
1C Soy Sauce
Juice of 3 limes

Toss to combine and let sit at least a few hours

By itself, these chiles toreados are great in tacos or even as a snack, rolled up in a tortilla with a bit of queso blanco. I take them a step further:

Once marinated fully, add chiles toreados to food processor and process until finely chopped
Dispense into a bowl add:

2 cans petite diced tomatoes
2 cans crushed tomatoes

Stir to combine and season with garlic, cumin and salt, all to taste
Can't give you any guidance here, as seasoning salsa is extremely variable and somewhat of an art (if I may be pedantic)

One half yellow onion, diced

Two or three jalapenos, diced

Two cloves garlic, minced

Handful fresh cilantro, minced

Pinch of salt, smaller pinch of cumin

Dash of lime juice

Mix, serve.

Any other ingredients are fucking stupid. unless you want to use habaneros or whatever, in which case you're probably a neckbeard

Damn. I I though *I* took my salsa seriously.

What kinds? Me, I've got two anchos, half a dozen Anaheims, two fish peppers, and two each of the NuMex Orange and Red (mild habaneros, the red slightly hotter. Yes Virginia, there is such a thing as a non-GMO mild habanero. I have high hopes for them).
