You've obviously never been to Texas.

To answer the question:

Tex Mex is just Americanized Mexican food. Most Americans won't eat traditional Mexican food because it's hard to get them enthused over "soup with guts in it" or "corn pancake filled with cow tongue". These things are delicious, but they're also poverty food. And the entire reason Americans came to America in the first place was so they could avoid eating poverty food. But Americans will eat the everloving hell out of sone skirt steak and velveeta, so that's what Tex Mex restaurants serve.

About the only good thing to come from our government essentially flooding us with Mexicans in an attempt to garner easy votes is that more and more authentic Mexican food is being served. I live in East Texas and what Tex Mex does survive is moving more towards the Mex end of things.

And who doesn't like fajitas? Holy christ those things are good.

Not cooking everything with a generous healing if chicken bouillon.
No real use of chiles.
Wrong cheese. Mex cheese is saltier than cheddar or mozzarella.

Every single time I've had tacos al pastor it's been the best thing ever. It's really hard to go back to just ground beef tacos after that.

I'm open to trying authentic mexican food, I'm not too familiar with what to expect. I know they like a lot of the typical tex mex stuff. But they also like mole sauce (which always seems to be way too much on the plate). And they like unsweetened chocolate too right? Honestly I wish I knew more about their cuisine.

Most of the Tex Mex shops around here rely on carnitas and asada as mainstays.
Chiles galore, but I agree that most don't use them well.
Much of our Tex Mex isn't really Tex Mex, though we have plenty of straight up Tex Mex places. Sonoran would be more accurate, but it's definitely more Americanized than in sonoran Mexico. Maybe AZ Mex should be a thing.

Where do you live? Mexican food usually consist of a soup, starch dish , main dish and a dessert . This is called comida corrida similar to italian meal structure. Then you have antojitos, which is basically street food and most known in the US such as tacos, gorditas and tortas.
