Carbonara has five ingredients.

You render out the pancetta, boil your pasta until al dente. You beat the eggs and butter together with a bit of the Parmesan, but not too much. I actually attempted an authentic carbonara recipe that was posted in one of these shitflinging threads once. Was much different than I was used to with the cream but still tasted ok, felt like it was missing something though. Had to use panchetta rather than guanciale since I couldn't find it.

Personally, I think cream dilutes the flavor of carbonara to the point that it's not worth it. I have always made carbonara the traditional way, but one time I started making it and realized I didn't have enough eggs for my pasta ratio. So, I said fuck it and added some cream. 2)You put way too much spaghetti (or way too little sauce), that is almost enough for 2 people. For 2 people you need at least 2 eggs (add an extra yolk for a richer sauce) and a good handful of cheese. The final dish should be glossy and coated, not bone dry.

3) Finish with a bit of extra Pecorino and more black pepper, your dish is lacking in both.

If your ingredients are solid then this dish should taste amazing. It is basically just fat, salt and carbs after all.

Cook some pancetta in a pan with a bit of oil, add pepper at this step too if you want. At the same time you should be cooking your spaghetti as desired (al dente you fucker). Add a bit of pasta water and your spaghetti to the pan and mix it up a bit. In a bowl mix a few eggs, as much cheese of your choice as you like (parmesan, romano, who the fuck cares use what you like) and pepper. I actually tried proper carbonara very recently and fell in fuckin love with the dish - to a point that im cooking it 2-3 times a week.
Its fucking brilliant - and so fuckin simple to make with relatively cheap ingredients.

I make the regular carbonara - except i add garlic with the pancetta/bacon. Once you get it right its extremely easy to make the sauce creamy.

Anyone advocating adding cream is likely murricun - if you add cream - its not carbonara - any chef worth his salt will tell you this.

Not to say adding cream is bad - it just creates a fundamentally different dish as a result.

Italian here, don't eat that much carbonara because I need to keep my cholesterol levels low, but this is what my mother told me
