Also, aspic, the old fashioned kind made from scratch, from actual bone marrow making your stocks rich and gelatinized once chilled down, were the epitome of french haute cuisine perfection, and known to be nutritious. They were quite happy to boil meat to overdoneness and slice it chilled inside the aspic as well. I also think these things photographed really well, and doing the ladies luncheon and impressing the mad men era hubby was the way things went in those times. Women weren't 9 to 5ing unless they had to, and had a little time to fuss over food and be admired for creativity, something they didn't get in the workplace satisfaction.

I _adore_ tomato aspic, like a cold refreshing bloody mary or maybe like a summer's fresh gazpacho to me. Both have great personal connotations, and, also, though she denies it, my grandmother made it during my childhood for her own reminiscing at holidays...so this was obviously part of her past..maybe a 1920s to 50s item she admired from someone older than her. She was a pampered child and wife both, and had the junior league, and pilot wife's club meetings and cocktail parties kind of lifestyle. In her later years, she refused to make it like she understood it was frowned upon by modern society...but I secretly missed it til I matched her recipe. I shall indeed be making it this summer. It's good hangover food, too, a chilled deliciousness and bit of tabasco.

My mom, during the 70s, made a sherbet-vanilla ice cream one, the frozen aspect melted into the warm bright green lime jello mold, to which was later filled with pineapple, marshmallows, and I forget, coconut or cottage cheese? Something ambrosia-like and weird but delicious cold. This was for birthdays and potlucks, and people devoured it, even those who laughed at it.
