I don't know anyone who prefers tempe over something else. Most people I've known seem either ambivalent about it and eat it when it's an included part in some dish or other or actively avoid it. I think only Indos actively like it.

To me those are just still excuses, it's not a really good food anyway, i agree raw fatty tuna and raw salmon tastes great but it's not anything amazing, it's just sushi, it's another food that originated from peasants except this one is actually a survival technique.

I am a sushi chef and I hate that people have this idea of sushi. It's only non-Japanese people who think that sushi always needs soy and wasabi and it's mostly those same people who eat it that way.

Just like any other prepared dish, the sushi should be seasoned properly before it's served so that little to no additional condiments are necessary. I hope you wouldn't put ketchup on a nice steak. The flavors should already be there and in the right proportions. Traditionally, a bit of wasabi is put in nigiri between the fish and rice. Soy, sweet soy, or ponzu sauce may be carefully added in small amounts to bring out certain flavors.

When someone orders off the menu, I just make them the roll/nigiri/sushi and let them do what they want, but when someone orders omakase (chef's choice), I'll recommend they try it first without soy or wasabi. There's a reason I prepared the dish in a certain way and I want you to taste that.

It's fine if you don't care for sushi but it saddens me to see people disregard a dish simply because they may have a mistaken impression of it or have been eating it wrong.

That's the thing. I was raised on particular foods prepared particular ways. The only mushrooms I was fed were cheap bland button mushrooms that were steamed into a dish or something. Now that I've tried more interesting varieties and different preparations, I realize that mushrooms can be delicious.

I recall the first time I had asparagus that wasn't steamed. My aunt and uncle rolled it in olive oil, salt, and pepper and broiled it. Asparagus went from one of my least favorite foods to one of my favorites in the course of one meal.

However I've definitely been to have omakase at highly regarded sushi bars and seen people ask for soy and wasabi, so I tend to assume Americans are just ignorant. The difference is that the chefs there can politely say no and most people will realize they made a faux pas. I'm also just keen on learning new things, so I'm the kind of guy that will read about a cuisine before I go out to eat it. For instance, I read that Ethiopian food is served on a large spongey bread that is both the plate and an edible component of the meal and it's traditional to eat with fingers. While I'm sure most Ethiopians here in the US would not judge a white dude for using a fork, I'd rather have their respect for taking the time to learn about their cultural practices.
