delicious. Looks like the new-haven style pizza place that has become a chain here. Too bad its so pricey and its certainly no Frank Pepe's but its way better than what we had before as options (Neapolitan, which is fine sometimes, or terrible chain pizza).

Not OP but assuming its a shake of pecorino romano because in New Haven style pizza cheese is actually not standard on the pizza you have to ask for mozz and I actually like it better the way it is in the picture sometimes if the toppings are really high quality it lets them stand out.

I panfry mine in peanut oil or shortening in a cast iron skillet topped with salami and red peppers I roast atop the gas stove and then skin, seed, and slice. Family loves it and great if you don't mind thick crust pizza.

Well yeah the idea is its cooked pretty fast in a very hot wood or ideally coal oven and those who grew up on this style of pizza tend to like a bit of char, I know I do. I find most pizza I order tastes undercooked and sometimes I even throw it in the oven when I order delivery to bake it a bit further.

Ain't nothing wrong with toppings under cheese. works very well on Quad-City style pizza which uses a finely ground sausage. Pic related.
