Can someone explain to me why people like runny eggs? Is it supposed to act kinda like cheese?
I find it just like snot

It coats your taste buds that detect fatty food (they exist) better which tastes good to many. Some don't like it and that's fine, that's why they ask you how you want your eggs at most places.

How can you enjoy any other kind of egg? I mean, I guess a properly hard-boiled egg is pleasant once in a while (the yolk should be softish and crumbly, no green sulfur ring on the outside), but the gooey yolk is 95% of the pleasure of eating an egg.

I make exceptions for scrambled and omelettes, but even those should be a bit wet.

It's like nature's hollandaise.

There is a subtle change between completely uncooked and runny egg though, and I could understand disliking it when it's closer to raw yolk texture.

Still, I'd rather have slightly underdone white even than solidify any yolk in my egg and soldiers.

I've done this, but it feels so wasteful. What's worse is the people that throw away the yolk and only eat the white.

I usually compromise with myself, like if I am frying 3 eggs, I will add just the yolk on the 4th egg, and feel like I'm accomplished something without being too wasteful

Egg whites freeze really well and still whisk up fine, just thaw them overnight in the fridge. As for discarding yolks, let us not speak of the heart healthy omeletters, they are a wan and sorry people.

>> No.6334435

>>6334065
I cant remember what it is called, but there is some kind of compound or somthing in eggs that when cooked too long/violently it hardens and has an effect on taste/texture.

Eggs are delicate and should be treated like silk. The only exception I can think of is a nice browning on the outside of a country omelette done with added butter at the end of cooking, or the nice crispy texture on the bottom on a fried egg (but the center should be silky and the yolk should be like a hollandaise).

Watch some pepin, the man is the MASTER of eggs.

It's just messy and delicious. Runny egg yolk tastes better than solid egg yolk. Just like warm, decadent goo that can cover other things and also make them more delicious.

Goes well with bread. If you eat your breakfast with biscuits or toast? Just use that stuff to sop up the egg yolk.
