Round 2 of the /ck/ challenge.

This is an OPEN round, so don't hesitate to join in. And congratulations to pon !g5GTSHLbXY for the high score in the first round!

If you're interested in competing, there are a few simple guidelines we ask you to follow. Your entry will be disqualified otherwise.


-Please timestamp your submission! Detailing the cooking process/posting a vertical is encouraged but not required. If posting multiple photos, you don't need to timestamp each one, as long as the final submission photo is timestamped.
-You MUST use a unique identifier; if you don't want to use a tripcode, you must have some other way to distinguish yourself from the other contestants, such as a cute bird or scary statue in your timestamped entry, as long as it's clearly visible and you use it consistently.


Voting will be carried out in this thread. Please read the voting guidelines below.

VOTING GUIDELINES


Voting follows an 'Iron Chef' style scoring system. This means you, the people of /ck/, will judge each entry individually instead of deciding on what you feel is the "best" dish.


Dishes are scored out of a total 20 points, based on 4 categories (worth a maximum of 5 points each); Presentation, Originality, Appeal and Challenge Goals. You may award 0's if you feel the contestant did not meet your expectations for a category.


-Presentation: The appearance of items on the plate; plating skills
-Originality: Creativity in composing the dish
-Appeal: How appetizing the food looks/whether or not the dish appeals to your personal taste as a voter
-Challenge Goals: How closely the entry followed the challenge goal(s)


The distinction between Presentation and Appeal: If someone submits an artfully arranged but burnt steak as an entry, it may score high in Presentation but low in Appeal.

Dry ribs, slaw and potato shreds.

Didn't take any photos for a vertical because it's just ribs, but the spice rub involved fennel, cumin, pimento and mustard seeds, cloves, cinnamon, chilli and mixed peppercorns.

Homemade jalapeno poppers
Because fuck the frozen ones and their preservatives.

1: remove stems, split peppers, and remove all seeds. Blanch peppers

2: Fill peppers with a mixture of creamcheese and shredded cheddar, mozarella, and monteray jack.

3:Dunk peppers in milk then coat with a flour mixture comprised of flour/salt/pepper/paprika/cayenne pepper/garlic powder

4: Let peppers dry for 10 minutes, then repeat the milk and flour steps.

5: Let peppers dry for additional 10 minutes, then dunk into milk followed by seasoned bread crumbs, let dry and repeat this process once more to insure complete even coating.

6: Fry peppers at 350'F in a deepfryer, bout five minutes or so, they're done when golden brown, hard to overcook though.

7: Freeze leftovers in plastic bags, reheat at at 425F for 20 minutes, flipping halfway.

Made 45 of these motherfuckers and I'll be pulling a few out of my freezer at a time for months. Better than storebought/bar food.

OK let's see if I did this right.
Slow smoked brisket in a basic ketchup base barbecue mixed with a dry stout reduction and habenero extract. Really fucking spicy. Topped with smoked sharp cheddar and set on top of a Hawaiian style Cole slaw with pineapples and a Greek yogurt sauce. Hand cut steak fries drizzled with a garlic and leek infused olive oil and some salt.

Venison can be barbecued. Barbecue is a process, not "gee this can be barbecued therefore it qualifies".

I didn't see any discussion of how lavi prepared the venison, but gave lavi the benefit of the doubt on it.

The poster with the sous-vide hamburger, on the other hand, explicitly stated that the hamburger was boiled and then seared in a frying pan, with no BBQ involvement of any sort.

Corn on the cob can be grilled. If I boil it instead, is it still barbecue? How about if I cut the kernels off the cob and make corn soup?

Well, I got mine at my local asian market. But if you don't have access to that, you could order them from Amazon. It's really hard to find any substitute for them, as they have a very specific quality (they have an anesthetic property that numbs the mouth and tongue, along with a spicy, slightly citrusy, piney flavor). You could try to make a mix of black pepper, citrus zest, cayenne, and....maybe some fresh rosemary? To try and replicate that quality? IDK. That's a tough call.

Shit, I think the closest asian market is like 40 minutes away :( Sometimes I get lucky with the local shops for more specialized ingredients, maybe I can try going up to Whole Foods or similar stores... I need these dumplings in my mouth and I can't wait for an online order!

Couldn't find the peppercorns at either store so I got some kind of crappy szechuan five spice seasoning that will hopefully mimic the flavor... I'll mess with it. Just don't have time today to go searching for them :(
