>Italians over the centuries have pioneered laws to control the origins and protect the "particular reputation and worth" of foods under what is known as "denominazione di origine controllata". Food which passes the review board and adheres to the rules is given the initials D.O.C. DOC pizza is governed by a Neopolitan member of The Association of Pizzaioli Europei called the Association of Vera Pizza Napoletana or "The Association of True Neopolitan Pizza".

>Marinara : tomato, oregano, olive oil, salt
>Margherita : tomato, mozzarella, olive oil, garlic, basil, salt
>Al Formaggio : parmesan, lard, garlic, basil, salt
>Calzone : ricotta, salami, olive oil, salt
>10. Variations on the four styles are allowed as long as they are in good taste and do not violate other culinary rules or regulations.

I'm ok with this. It makes it much easier to figure out what you like and dislike. There are enough letters in the alphabet that we can come up with names for whatever we want, but it makes it very confusing when any jackass can call a tomato-bread combo "neopolitan style pizza" and consumers lose.

Easy example: the Cronut. I've had a good half dozen knockoff "cronuts" and three actual cronuts from Dominique Ansel. The knockoffs don't have a texture or flavor remotely approximating Ansel's version and yet, you have people in Iowa and Texas and the Florida Panhandle having strong opinions on "cronuts". How is this possible? Of course, it is not.

Or take cheese for instance. Raw milk camembert is essentially unheard of in the United States? Why? That's a subject for another thread but it boils down to entrenched industrial dairy interests in Wisconsin and other such places who don't want to put in the more costly, albeit well-understood steps that it takes to ensure the safety of raw milk cheese. So they get the FDA to ban it. And yet, millions of Americans (the majority of whom lack passports) think they have an opinion on camembert and brie... of course, this is impossible.

Last example: wine. California is notorious for making a pink, sweet, awful tasting thing they call "chablis wine". It has utterly ruined the reputation of chablis in the western US for an entire generation, such that if you mention having a chablis in polite company you get looks of horror all around. Of course, "the free market" should take care of this, and educated wine drinkers understand what to buy and what not to buy, but guess who loses? That's right. The average consumer.

Free market fundamentalists will shriek with moral outrage over the "nanny state" but hey check this out: some people actually DO know what's best for you. Pic extremely related, enjoy your "grass roots" advocacy paid for by multi-billion-dollar multinationals pushing garbage down your willing throats.

I totally agree, honestly. Some things should be unregulated, but with guidelines- as in no type of culinary trade is outright banned, because there *IS* a way to do it without giving everyone who touches it a bout of IBS. Also, when there's a certain type of wine, it should have guidelines.

However, banning a type of food, or a form of ingredient because stupidity can result in problems is tantamount to sin.

I love German beer, my favorites are all German or a German style made by an American brewery. Well the styles that Germany has perfected are the most common styles of beer. The styles Belgium has perfected are more niche and the best American styles are either copies of established styles or too experimental to have a legacy yet.

If I was to only have one kind of beer for the rest of my life it would probably be a German or British brand. If I had to pick a country to drink from it'd be a tossup between Belgium and America.

Its silly to discount americans making the best examples of most styles of beer simply because the styles are based on recipes that predate america. American craft brewing has revived all sorts of old styles that central europe's stagnant market killed long ago as they marched toward homogenization.
Plus american farmers have engineered a lot of excellent hop varieties that simply were not available until recently. New Zealand and Australia have gotten in on this too, its a shame europe has not
