Try making pancakes with buttermilk and adding 1/4 tsp of baking soda. Don't overmix the batter. And let it sit there for five minutes so that the flour has a chance to moisten. Make sure your griddle is hot enough. And make sure your batter isn't fucking THIN.

pancakes are chemically leavened. Flat pancakes means all the CO2 generated by the baking sode and baking powder escaped before it had a chance to rise the pancake.

I mix in everything when making buttermilk pancakes from scratch. Except I add the leavening agents in last, just before I spoon onto the cast iron. This way i can stir the shit out of the batter with out losing the CO2.

I use this recipe. Except, I now add in an extra egg yolk and more sugar. Much simpler than whipping egg whites to stiff peaks and folding them in. The key is to let it rest, and spoon the batter out gently. Pretty damn simple.

I've been watching her videos off an on for years, and she truly is a gem. What recipe are you using? Don't expect good pancakes if you're just using bisquick + water.

I recently made some pancakes and used a modified recipe based on the Ihop one. I subbed buttermilk for whole milk + extra butter, added some vanilla extract, used less sugar, and added more flour because the batter was too wet.
