It's my mothers birthday coming up and I told her I'll come over and cook her dinner. My sister and I had decided that we should make Mexican for her (my mother loves fresh salsa and guacamole). However I have no idea what to make for a main.

I find a lot of "Mexican" restaurants here miss the entire point of Mexican food and just buy canned ingredients and throw it together. I really want to make something that shows off the freshness of Mexican cuisine, but I have no idea which dish would be do that. Is there any advice or suggestions you guys can give?
