By the way, they made mustard in the past (till the middle ages) using something different from vinegar, though this was mostly for price reasons. Forgot the name and Wikipedia has a hole when it comes to this. Anybody knows what it was ? And I know there are still companies making it that way, but it's a dying art.

For mild yellow mustard - and yes, there is a place for it in food - I would go with Plochman's or Heinz as my personal #1. Both are less obnoxiously vinegary than French's.
