It could be that or you know it could be people living in a place that is filled to the brim with hole in the wall Mexican places that know for every good place there are at least 5 absolutely terrible ones and that the descriptor "authentic" doesn't mean jack shit when it comes to quality. I guess by "authentic" I just mean quality preferably local ingredients, prepared well.

Where I live if a restaurant is shit it won't survive, so I don't really have to worry about that. We've had multiple white college grads literally start restaurants marketed as "authentic" mexican, the type of restaurants you'd imagine people who read Vice go to. Even daddies trust fund doesn't keep them afloat for more than 3-4 months.

I think your definition of authentic is causing confusion. Authentic food just means it is prepared with the same ingredients and style as the home country. It says nothing about the quality. Kinda like how you can go to walmart and get some ground beef on clearance or you can go to a butcher pick out your cut of beef and have them grind it for you and then make burgers with them. Both would be considered authentic but one tastes a hell of a lot better then the other.
