Is there a proper way to substitue for buttermilk? I heard adding lemon to regular milk but that sounds terrible. I am in Mass and mostly snowed in so the store is out of the question but want to make something that requires buttermilk. Thoughts/ideas?

you can use plain milk for that, though a bit of vinegar or lemon added might tenderize them more. if you're using a vinegar-based hot sauce there shouldn't be any problem using vinegar in the milk.

Buttermilk is utilized for it's acidity. You can add lemon juice to regular milk if you're cool with a bit of citrus flavor. If you want it to remain neutral, white vinegar can be used instead, but in a smaller amount.
Be careful to not let the acid sit in the milk too long or you'll get ricotta.

Depends on the recipe but usually sour cream, buttermilk and plain greek yogurt are all interchangable.
