Hey /ck/,

Lately I've taken an interest in authentic mexican food. Outside of the Americas people often label Tex-Mex as Mexican and our cooking knowledge of that often doesn't go further than chili, tacos and burritos with sauce and spice mixes from packets and jars.

Lately I've tasted mole and it was delicious, so I'm hungry for more authentic mexican. My question to you: What are some typical authentic mexican tastes, ingredients, spices and recipes?
