The hard shell was popularized by Taco Bell, they used a hard shell because they stayed fresh longer and were easier to ship.

The burger meat is also cost related. Real beef strips, of any cut are a lot more expensive than than cheap ground beef mixed with filler.

Liquid cheese is mostly oil, far cheaper than real shredded cheese.

It was simply the merging of west coast/texas american tastes with the mexican tastes.

There was originally a big translation issue which is accountable for americans taking some spice and adapting it to their own traditional mexican beef tacos

During the rise of the 20th century, western america developed really fuckin fast and mexico was like wut

so once all these veggies and spices were available to muricans they were like fuckit lets throw mild veggies in here and add spice to suit the consumer

and so they did

and then beef got expensive, and it was too muchmoney to get fany veggies

so now taco bell is basically shit meat, some lettice andonion, plus some shitty tortilaa
