going to fry some chicken tonight, do i need to cook it before i bread it? or do i bread it raw and then put it in the pan?

Let your chicken come to room temp
heat your oil to 400F
dip in egg wash
coat with flour and bread crumbs
let it rest on a rack for 5-10 minutes so that the starches stick
gently drop into oil
take it out when it floats

Season it with salt and pepper then dredge it in flour. Fry it in 375 oil till golden brown. Should take about ten minutes for wings and fifteen minutes for the other pieces. Put a little paprika in the flour for extra goodness.
