Ok CK, here's the problem:

Once upon a time I hated hot sauce. Then I tried Cholula and everything changed. It was flavorful and didn't seem to cause any (unbearable) physical pain.

But now, years later, I find my self dumping outrageous amounts of this stuff on my food. Shit's expensive, I'm ready to level up.

I felt like total idiot at lunch today.

I had a quick fast food hamburger and fries at Dairy Queen and had a bottle of Cholula on the table. In spite of the fact that I'll hardly eat a hamburger without Cholula on it, I forgot to cover the hamburger in Cholula. I had about one bit to go when I noticed the bottle of Cholula still on the table.

In spite of having forgotten to pour Cholula on it, the hamburger was pretty good.

Can't say the same for the fries, though. Those were the worst fast food fries I've ever seen -- they really, really, really need to change the cooking oil.

I like both but theyre very different. Sriracha tastes almost purely of chili. Cholula is much more flavorful in other aspects and not so much chili flavor. It tastes more of garlic and a tiny bit sweet along with some chili.

it's almost creamy in texture, a little bit of sour, a good amount of heat. it plays to the strengths of the food without overpowering it.

Idk if they still make it but when I was younger i loved Buffalo hot sauce. It wasn't that hot wing bullshit.
It was thick, dark and spicy. It was the GOAT on chips.

Melinda's, OP. It's made with carrots or some shit instead of vinegar so it's really flavorful instead of just plain hot. Pro tip- if you have a chest cold with gunk in your lungs, if you eat a shit ton of hot sauce it will kick it out within a day or two. I used to like to steam plain carrots and cabbage and douse them with Melinda's hot sauce, pretty good.

I disagree that Black Label is better. It's hotter, to be sure, but the subtle, smoky flavor get's overpowered by the heat.

I never really did like hot sauces that are hot "just to be hot". Pure unadulterated heat just to claim "YOUR FARTS WILL BE SO HOT YOUR PUBES WILL SINGE" doesn't bring anything to a dish other than pain. I mean if you're into that, go for it, but I prefer things with flavor.
Right now my go to is Tapatio but Tijuana Flats has this shit called The Sauce That Saves and it's fucking great.

the interesting flavours compounds of the chile are quite thermolabils and volatil and uncompatible with an industrial process and standards.

buy some fucking chilis, serranos, habaneros, pasillas.
toast the shit out of them, like they need to be black on the outside.
Do the same with some green tomatoes

mix the shit with some garlic, water, oil and salt. adjust with more or less water/cooked tomatoes for the texture.
you can drop some spices on it like curcuma, red pepper etc to make it extra good

keep it in your refrigerator, it can handle 3-4 days.
rinse and repeat

I have this one that's more a novelty than anything, though I do use it as my go-to. You literally need one drop (not figuratively, you really only need a single drop) to get the heat. If I remember correctly it contains ghost peppers. I mostly use it for spreads now, like I'll do a drop into a spoonful of mayo or sour cream and mix it for a sandwich (yes, I understand the mayo/cream cuts some of the heat, but I'd argue that the ghost pepper is hot enough that reduction from the fat is negligible). I think they call it 2nd Dimension sauce or something. Too lazy to go check. Also, got this scorpion pepper salsa that I really regret buying, if only because it's so spicy that I can't really have it in a chips-and-salsa setting unless I cut it with another store "hot" salsa. Like if I'm going to have, say 8oz of salsa for my chips, I'll do one spoonfull of scorpion and mix it in.
