So i'm interested in pickling, but the thing is I want them to be good so I turned to you experts. What are some good recipes for pickling?

What kind of pickles? I made saffron pickled carrots this weekend, during the summer I made pickled dill cucumbers, and last summer I made pickled beets. What are you into anon?

If you're in the northern hemi I don't know where you're gonna be getting them cukes but alright here goes. I'm assuming you want to use a vinegar base.
1/4 cup salt
6 cups water
2tsp coriander seeds
1/2 tsp fennel seeds
3 flowering dill heads
3 lbs kirby pickling cucumbers
4 cloves crushed garlic (lightly anon)
2 cups white wine vinegar (DO NOT USE DISTILLED)

1. Dissolve the salt in water, and add coriander, fennel, and dill. Set this mixture aside.
2. Scrub the cucumbers well. Cut away a thin round from the stem and blossom ends. Doing so will keep your pickles crisp. Slice the cucumbers lengthwise in quarters. Put the spears in a large bowl and cover with the water/salt/spice mixture, cover and set aside for 24 hours.
3. The next day pack the spears into scalded quart jars. Reserve 2 cups of brine mixture. Strain the spices through a sieve and then evenly distribute the spices into the jars. Bring to a boil the two cups of vinegar and two cups of brine and then pour the mixture into the jars to cover the spears.
The jars can be sealed and stored for a week or for long term storage leave 1/2 inch headspace when filling the jars then seal. Put the jars in a boiling water bath for 10 minutes or for 30 minutes in a water bath between 180-185 degrees f.

Double pickled pickles are amazing. Take a pickle or even an entire jar, put it in a clean jar and add your own mixture of brine and vinegar.
