I like thick simple chili to use in other "recipes" like frito pies, chili dogs and to top fries or nachos. My current recipe is just onion, poblano, ground beef, a little chorizo, a few dried arbol chilis(which I later remove) kidney bean, a diced tomato and of course spices.

I dunno, personally I would have taken a bit more time to dice up the peppers and such so they get more evenly distributed throughout the chili, but I suppose look doesn't matter so much in your case

I like adding corn to my chili mostly for the color contrast, I think it really helps the dish pop visually. General recipe is ground beef, crushed tomatoes, tomato paste, kidney beans, black beans, diced onion, diced jalapeno, corn, cumin, and chili powder. Always garnished with sour cream and cheese (except in that picture).

Most people I cook for are big bitches and don't like spicy food, so I have to keep the heat down, but if I'm making it for myself I'll throw in a habenero in addition to the jalapeno.

Last was something I've been thinking about for a while, a deep fried caramel apple with nuts. I'm sure this has been attempted before but I put it in the freezer for around an hour, gave it a light dusting of flour and battered then fried it. Came out more perfect than I could imagine. Apple was still chilled but the caramel and batter were warm and crispy.

A lot of them build a ghetto seating area with a roof and tables, it's ghetto and gets the job done. Almost all have the little plastic trays for if you get food to eat at the truck, even ones without seating have a bar style ledge on the side of the truck to stand and eat at. They are mainly built to serve worker Mexicans around here. They always make the food better when you eat it at the truck, I'll probably eat at one later today I'll take a pic.

So I don't have an image yet, but right now I'm preparing rabbit marinaded in an odd foresty marinade (there's apple cider, lemon, orange and half a forest of herbs and spices in there, along with walnut oil), which I'm going to wrap in bacon and put in the oven.

This is my experimental take on Burgundian chicken filet. Can't make an omelette without breaking some eggs, etc. I'm going to end up devouring that meat any way.

(You guys should look into the Dutch definition of the Burgundian lifestyle. "Bourgondisch". It fits /ck/ perfectly.)
