Hey /ck/,
Ive had my knives for a while, and Ive noticed they've started to dull slightly (I didnt have the money to buy sharpening steel or anything else)
Now that I have the cast, I would like to get a good set of tools to sharpen my knives, mainly sharpening steel and sharpening stones.
I have an old dull kitchen knife I can practise on, and I would like make it use worthy too (if possible, that I dont ruin it with practise, but it matters not).
So what I ask is that, does /ck/ know good sets of sharpening steel & stones?

Spyderco Sharpmaker is foolproof, a Kai 240/1000 grit whetstone from Amazon and some Youtube tutorials would be a bit mire difficult but cheaper.

the sharpmaker is garbage anyway. since you haven't posted a budget I recommend the shapton glass 120, 220 500, 1000, 2000, 4000, 8000, 16000, 30000, the Shapton diamond lapping plate for maintenance; a felt strop with 1 micron diamond spray, a leather strop with 0.5 micron diamond, an F Dick Dickaron, a HA borosilicate glass rod, and a MAC ceramic rod to cover most bases. this should be enough for most situations. for your Japanese single bevel knives you'll probably want to expand on that somewhat if you value appearance, but you could either get by with finger stones on that or spend another couple hundred on jnats or reconstituted stones with some reactivity to bring out the desired finish, or just live with a mirror finish if that floats your boat.

OK, now we're getting somewhere.

I'd recommend the following:
1) an extra-fine DMT Diamond steel for day-to-day maintenance. Cost: about 20 quid
2) an extra-coarse DMT dia-sharp plate. Roughly 60 quid. You would use this as a starting point for a severely dull or chipped blade, and also to flatten your stones.
3) your choice of three stones. You don't need to worry about the exactness of grits, but look for something around 300, 1000, 5000. Shapton and Naniwa are good choices.

I'd go with 500-1000 and then the upper one could be anywhere from 2k to 5k, I'd lean towards the lower end of that especially since op isn't willing to tell us what kind of mysterious knife he's working with aside from "long" and "chef shaped"

Yeah, 500 would be just fine on the low end. I own 400, 1k, and 5k and that works brilliantly for me on both stainless workhorse knives (dexter, forschner) as well as a couple traditional Japanese knives. I was going to buy a finer stone for the Japanese knives but honestly the 5k gets them razor sharp and I don't care if the bevel has a mirror finish on it or not. I'm cooking with them, not taking photos and showing them off, so I never bothered to get a finer stone.
