/ck/, I am roasting a pork shoulder in the oven right now. Basically when its done I want to cut it up and portion it out to reheat over the next few days.

I don't know too much about food safety, is it okay to put hot food in a container and then straight into the fridge? or does it need to cool down first?

let it cool down first, putting hot stuff into the freezer damages your freezer

If it's bone-in you should cook it until the bone twists out easily. If no bone (or you want to be more accurate), you should be shooting for an internal temp between 190-210F (lower end if smaller, higher end if larger).

Already answered, but yes let is cool to close to room temp before putting refrigerating it.

Thanks, I do have a food thermometer handy.

So after I do refrigerate it, how long do you think it will keep for? Fridge only not freezer
