We're family. I found a smoker in the back garage and some hickory wood chips. 5 hours of low and slow smoked ribs turned out the best thing ive ever put in my mouth. Wife said it was the second best... (I think you know where im goin with that)

It is probably negligible unless you are leaving your board unwashed over a long period of time. Wood is also an uneven surface with lots of pores and is easily scored, increasing surface area for bacteria and reducing ability to properly disinfect.
