Before my telenovela starts , I would like to correct some misconceptions of Mexican food that your typical Mexican in America or Gringo wouldn't know about.

Let debunk some myths

1) There are no such thing as fajitas in Mexico.

this is not true, Mexico has their version of fajitas, which has bell peppers onions and marinated meats.

2)burrito does not exist in Mexico.
Another false indication. Even in Mexico people think Burrito is a gringo food. A burrito is a common staple eaten in northern Mexico. It is usually made with dried beef, and stewed meats

3) tacos do not contain rice.
This is wrong, even in a traditionalist point of view this is wrong. There are certain tacos that contain rice, such as tacos de guisado, which is type of taco with stewed meats. the rice , in a way, contains the saucy meat.

Yes, they are called flautas. They are usually served in a light broth and with cream and lettuce. Another similar dish is called tacos dorados or golden tacos. They are basically regular tacos but fried. Kind of Jack in the box tacos

I understand that traditional enchiladas uses corn tortillas rather than flour. And no sour cream.

Is there a website or a cook book that focuses on traditional mexican cooking? Been craving some good mexican food.

What's the likelihood that I'll run into any really great tacos de lengua in Texas? I've wanted to try tongue for some time.

Otherwise, what about barbacoa? I hear varying interpretations, but I've heard it's largely mutton, but someone told me that it's more a style, more Caribbean than Mexican.

Barbacoa is basically meat slow-cooked under ground/in a pit and usually covered with maguey leaves or avocado leaves. The preparation varies from region to region some like to add an adobo marinade and some use a cows head/mutton etc etc. You won't eat real barbacoa in the states unless you eat it in someone's back yard.
