hey im from New Zealand lets talk about meat pies because i at home right now and i really want one.
the first rule is don't add any vegetables ever.
the second rule generally is the less spectacular it looks the better it tastes.

my favorite meat pie is from paul prodhomme's louisana cookbook. it's called "paulette's wonderful meat pie."

Pastry crust; the filling starts with onion/celery cooked in half a cup of butter, then lamb, veal, beef + shredded potatos, cooked together with a ton of spices (red + black pepper, basil etc), spicy pie, then there is a topping where you take 1/2 cream and 1/2 cream cheese, herbs (thyme oregano etc) sit in it for a while, you bake it, om, so spicy but the cream calms it, so rich and fatty

The recipe is little different from a "pot pie" that you make in the USA, it's just wrapped in pastry instead of baked in a dish with pastry on top. So you make the filling, spoon some out on some pastry dough, fold the pastry over it and crimp the seams with a fork. Then bake it.

I can't tell you about the type pf pastry, because I always used store-bought sheets as I lacked the skills and tools to roll in properly. But I never pre-baked the shells, The pastry would go into the pie tins (I use to have a tin which would make 4 mini-pies) raw, then get filled with chilled filling, then put the top on, crimp and brush with some egg white and stab two small holes in the top for venting.

Then bake for about 30-45 minutes, longer if I didn't like the look of it. Let them cool a little in the tin, then turn out. They usually turned out nice.

(Before I moved os), I used to buy frozen Sergeants pies, cut the lid off, chuck in some tasty Coon and whack it in the oven. I miss a good meat pie. Pie face is probably the best chain around. Americans don't honestly eat very many pot pies since the 1970s. The amount of fat in a pie crust is double or triple the daily allowance.
