now i'm a big guy, not skinny at all, and have in a stoned condition eaten an entire family trough from kfc to myself (12p, i felt disgusted), but these portions (perhaps not represented to a great degree in this thread) are mindblowing!

yeah, silly. of course they're sharing. Japanese people and many other asians tend to have like 40 little plates on the table, and everyone just grabbing with chopsticks and putting on own plate.

everything in asian quisine is bite-size so its easy to share. tehy even cut up steaks... so. yeah. sharing.

see? You should feel disgusted that you actually seriously considered that these huge plates were made for a single person, you fat fuck :D

It depends, just like anywhere.

Generally, I find that セット meals are pretty big for their price, so long as they're outside of an izakaya.

School lunch is also pretty huge, size wise; and most independent cafeterias tend to run the same way.

Gyudon places are variable, and the price goes up rapidly.

Curry places almost invariably have large portions, as do ramen joints.

Sukiya, Yoshinoya, and Matsuya are chain gyuudon; it's basically fast food for people on the go.

It's cheap, filling, quick, and widely available. They're generally open very late, if not 24 hours.

It's healthier than McDonalds; but it's beef simmered in fish-stock, soy sauce, mirin, onions, garlic, and ginger over white rice - so it's not like you're eating a salad or anything.

But I want to point out that Japan actually knows how to do chains right. The quality of service and product are generally high, and they're usually not staffed by jerk-off "I don't give a fuck teens".

At least in my experience.

In Asakusa, Youshoku is interesting.
The old Japanese did not understand a European and American dish. And Youshoku was made.

The dish of Yoshikami is slightly expensive. The pork curry of this restaurant is old taste of Japan. When the Italian watches the spaghetti meatball of this restaurant, I may fly into a rage. However, it is my favorite. The fried meat cake is delicious, too. The style of the salad is interesting, too.
Asakusa 1-41-4.

The shop of the style American in the Arizona kitchen. The dish here is mysterious for a Japanese. However, it is individual and is delicious.
Asakusa 1-34-2.

I have eaten French food in Bisutro Katori. Quite good.
Nishi asakusa 1-8-9.

In Asakusa, a lot of Japanese tourists come, too. However, a really good shop is the shop which local people go. I am sorry, but I am not local people. You should ask an English intelligible local shopkeeper.

When I think of Chinese, for example I think of bold flavors, spicy, sweet, sour, savory. Cooked vegetables. Cooked meats.

Japan on the other hand seems so timid. Raw fine sliced vegetables to the side. Sauce to the side. Meat to the side. It really seems incomplete to me. Like they don't want to offend anyone so they leave every option to the diner. It's like they have no cultural pride... Again, if I am looking at this the wrong way please explain. I'm not saying I dislike certain vegetables or ingredients. But it's like a buffet on the plate. Why not combine the ingredients and make something rather than mixing them at the table? I look at these pics and see the same trend.

I'm just trying to get a grip on the cultural side of Japanese food. It's really foreign to me and I want to get a better understanding of it. I mean I know all of China doesn't eat General Tso, or Kung Pao. Just like Japan isn't completely Hibachi and Teriyaki grills.

>> No.5500214

>>5500181
>Definite western mind coming in here

No, I'm asking that question because you used the world "bland" but then you kept talking about how the dishes LOOKED as opposed to how they TASTE. That made me wonder if you had ever actually eaten the food or were just saying it LOOKED bland from the photos you saw. I'm confused because you used the world BLAND but then talked about the appearance of the dishes rather than the taste.

>Why not combine the ingredients and make something rather than mixing them at the table?

I don't claim to be an expert on Japanese culture, but I am reasonably fluent in Japanese and studied it for 3 yrs at Uni. On top of that I love all kinds of Asian cooking and I have watched an awful lot of the original Japanese Iron Chef. Repeatedly. And if that can be taken as any sort of a guide then it's pretty clear that the Japanese are very big into presenting food in it's "natural form". It's a cultural thing. Traditional Japanese cooking emphasizes maintaining the original flavor, color, and shape of the ingredients.

Oh, and I agree that is a bit unusual, at least compared to my western upbringing, and in comparison with other Asian styles of cooking. But I'm still wondering what that has to do with "bland"? Bland refers to flavor. What you're talking about is the physical location of things on the plate and/or table. I don't follow what one has to do with the other?

>> No.5500217

Sure. Guilty. It looks bland. I admit I eat with my eyes and Japanese food in particular "looks" bland. I have little experience with Japanese foods but all of my personal experiences look like this thread. Just sort of boring for lack of better term.

To your second point. I find it confusing that you claim Japanese focus on minimalism of cooking but have such high standards in gastronomy. I am likely generalizing, I know. But several Americans I speak with that work in kitchens speak highly of the Japanese right off the bat. Again, from my experiences I just don't get the hype. Is it worship of minimalism?

>I find it confusing that you claim Japanese focus on minimalism of cooking but have such high standards in gastronomy

Well, they have high standards in a lot of things, not just cooking. And even if we limit it to cooking only, the Japanese have no problem combining flavors and whatnot when they do foreign cuisine. There are more 3-star restaurants in Toyko than there are in any other major city in the world by a large margin. And many of those restaurants are French, Italian, Chinese, and so on. But the focus behind traditional Japanese cooking seems to be to focus on preserving the natural form of the ingredients.

>>is it worship of minimalism?
Seems pretty close, I think. I don't think the term is a perfect match but it's not far off.

Also, a lot of it focuses on the quality of the ingredients. When you have good ingredients they can stand on their own and you don't need a fancy preparation or a sauce to make it taste good.

>> No.5500318

Japanese food in general have delicate flavors. For an example. Do you feel any difference between jasmine rice and basmati rice? I have met an Australian guy who was a good cook but couldn't see any different between different kinds of rice.

Some people are unable to perceive delicate flavors and need the intense flavors of loads of salt, ketchup and mustard everywhere. Maybe Japanese food in general just isn't for you. There are some intense flavor japanese dishes but in general japanese food have delicate flavors.

>> No.5500323

....continued.

I'll use chicken as an example here, but this applies to just about all ingredients.

If I showed you a picture of a plain chicken breast cooked in a pan you'd probably (and rightly) think that looks pretty bland.

Why? Most of the people I know from my generation and younger tend to think of food as a commodity: a chicken is a chicken is a chicken. They don't realize there's a difference between the mass-produced supermarket meat and a really good free-ranged bird that's of a breed that tastes good rather than being bred for fast growth and breast size, because that's all they've ever eaten. (I'm sure the same is for the young generations of Japanese too.) Thus many of the common foods we buy end up being pretty bland and boring because they're designed to be cheap and mass produced rather than the best taste. The average chicken breast you'd get at a supermarket is probably from the Jersey Giant breed. They don't taste of much, so you pretty much have to use a sauce or breading or whatever to make it taste interesting. But if you get a really good chicken that ate a good varied diet then the meat is plenty tasty on it's own and doesn't need any additives. Alas most of us have never had such a thing so we don't know any better. That's sort of the way it is with traditional Japanese food. They go out of their way to use ingredients which taste good without a lot of extra preparation being needed. If the veggie (or whatever) is out of season so it doesn't taste all that great they simply don't use it.

So yeah, a lot of Japanese dishes might appear boring because we're used to the things we see on the plate not tasting of much on their own. But that's the nature of the western supermarket (and processed food industry) coming into play. We assume that all veggies are boring on their own because we're used to buying out-of-season ones all the time which are indeed lacking in flavor.

>> No.5500334

>>5500323

...continued again

Another thing to consider is that a lot of Asian cooking (Japan included, but honestly this is more of a Chinese thing) is focused not just on the taste, but other things like color and texture. The point of many dishes may not be flavor at all, but a certain appearance (traditionalism here), or a certain texture. Many of the foods that are highly prized in Asia and cost boatloads of money are desireable because of that texture. Shark fin soup, for example, has nothing to do with the flavor, but rather the texture of the "fibers" in the fins. Likewise for swallow's nest, and so on. Personally I don't find that kind of texture appealing but it is a big deal in Asia.

minimalism does not mean "have nothing"
it means "make something out of little"
and generally focuses on making that 'something' powerful, typically by means of hard contrasts, harsh edges and a focus on the overall form than the individual pieces that composite. The silhouette, if you will
just because they use few ingredients doesn't mean taste is absent.

I don't understand shit like this, and it's super common in Japan. It's just like "here's a bunch of individual things put together to look nice" and lots of times it has very little cooking (like earlier). It just isn't impressive. It looks good but sitting down to eat that I feel like I would be extremely disappointed because it would be like 1 flavor after another, not complexity or inter-mingling.

he didn't need to use a different term because bland was perfectly fitting for the problem he had with the food, though he left it vague the first time. Cleared it up by second post. Didn't stop you though.

Well, simplified cuisine that focuses on the ingredients is becoming more fashionable in at least Modern European cuisine. Each item in the bento box is more like a single dish, not separate ingredients for one dish so it's not valid to say other cultures would call it cooking. Anyway, the focus is on the single ingredients as has been mentioned before.

I hate bento boxes, though. I think they're absolutely ugly and I find nothing but the sushi and spinach appetising in that posted picture. I love having multiple dishes and stuff like OP's pic looks tasty but a bunch of raw stuff isn't for me.

Well that does seem like a logical assumption for a FOOD board now doesn't it? Especially when your counter-examples involved completely different or clearly modified words, like boring or AESTHETICALLY bland. Maybe I'm an idiot but it seems pretty clear to me that when discussing food the term bland refers to flavor.

If you were to come across a posting on a fashion board using the word "face" you'd probably think they were talking about a person's face, right? After all, that is by far the most common use of the term. Especially in that context. Would it then make sense to jump in and say well what about a WATCH face? OFC not. If someone meant to use the term in an non-standard manner they'd have used different terms. Just like you did:

food has never been just taste
it's a whole fucking system, and aesthetics are clearly an important part of it

>If someone meant to use the term in an non-standard manner they'd have used different terms. Just like you did:
hence the second post, which clarified which context
but again
it failed to stop you
because
once more
bland does not refer to flavor without context
bland doesn't refer to anything specific without context
and if he's saying the physical location of things on the plate and/or table
it's pretty fucking clear the context isn't the flavor profile
(but of course, that didn't stop you)

We'll just have to disagree on this one. I think it's pretty clear that bland refers to taste on a food board.

I think you actually agree, which is why you used different words when talking to me, and also why you seem to have ignored my example about the word face.

As for your image macro, right back atcha buddy. You seem just as bent up about this as I do. Do you honestly think the term bland on a food board refers to something other than taste without further qualification?

>also why you seem to have ignored my example about the word face.
I had something but it didn't flow right so I removed it
the biggest issue with the example is that face can't actually sit within two separate contexts while looking at the same item (ie taste/smell/looks for food), at least not that I can think of, making it an insufficient comparison. Also that 'bland' describes the context while 'face' sets the context.

>You seem just as bent up about this as I do.
my issue was more with how the whole conversation actually managed to say nothing at all about japanese cooking
the only useful idea out of the whole like 10+ sequence was "Traditional Japanese cooking emphasizes maintaining the original flavor, color, and shape of the ingredients."
and that's not a compliment
not that this is any better

>Do you honestly think the term bland on a food board refers to something other than taste without further qualification?
but this was post-qualification
and you identified the qualification
>What you're talking about is the physical location of things on the plate and/or table.
yet refused it, thus the question remained

I do not know the reason.
Tiramisù was all the rage in old days in Japan. Possibly it may be the substitute.
panna cotta is simpler. And it is cheap and is easy to contribute it.

However, is there so many Panna cotta?

in my experience panna cotta is really common in modern western restaurants too.

also the guys arguing about japanese food being 'bland' and 'not impressive', just shut the fuck up you're trying way too hard. they have one pot meals, they have bento boxes. you read 'modesty' into it because that's a stereotype of japanese people in general. it's a complex, diverse cuisine with strong flavours and subtle ones alike. and looking at these plates if you don't see the pride that is taken in presentation and prep then you're retarded.
