Sure, America doesn't have Carême, or Escoffier, or Boulud; that doesn't mean we don't have a legitimate culinary culture. If you were to take a trip around these great states, you would find a culture growing strong! From Creole to Tex-Mex, and everything in between, food all around this country has it's own flare. We've got greats like Patrick O'Connell, Thomas Keller, and the late Charlie Trotter.

And yes, cuisine varies region-to-region; hell, in Maryland alone, you can find everything from German to Italian to English influences in cooking. That doesn't make it any-less legitimate than any other food culture.

Admittedly, there aren't going to be as many good restaurants that rely on culture fusion. And if you live in the suburbs, you're probably not going to find much better than chains. But, living in Iowa, I've found that the more rural areas have a pretty strong culture of hunting and farming. Quelle Surprise.
